You got lucky. I was driving up to Michigan in the work truck on a nice summer day last year. As I was going around a right corner at about 60 a bee came through the driver window and hit me ass first on the neck. Hurt like hell compared to bee sings on your arm or something. I can't imagine what a hornet to the neck would have felt like...

I'm sure the cop would just say "this is not a car"

The only problem i can actually think of with one handed riding is if you hit a nice bulb it might cause you to lean on one side and thus causing you to swerve or similar outcome.
This is the only reason I could think that cops would come down on anyone for riding with one hand.

I'm pretty sure that whether you're riding with one hand or not, when you get into an accident, they cite you for "failure to maintain control".

Obviously better roads in the States than in Canada. With potholes and divits in the pavement created by the winter-to-spring thaw here, I wouldn't ride one handed for safety. Hit one of those SOBs, and you've got serious road rash.

in the NY state VTL it is illegal to ride with one hand.

It is not widely enforced as far as i can tell.
