Yes, you can take a stock 250 on a track day. You don't have to have anything wired for most track days. For racing, you will need to wire things.
I don't know about where you live but I know for the tracks around me you need to be safety wired for track days. Most only need the oil fill, oil drain, and oil filter though.

99% of track day organizations only require you to remove your license plate and tape up your lights and signals. No wiring required.
If you race you need to wire everything required, use straight water and water wetter or similar instead of antifreeze, and remove the sidestand and lights completely.

Source? I have only ever heard of wiring for Advanced. Never for novice and intermediate. It varies by organization.

none of the 4 organizations I've rode with require that, even in the advanced group.

Maybe it was just the group I did it with. I think nesba strongly recommeneds it because I think if you spill fluids don't most organizations push the clean up cost to you?
