i think a 300 would be great, but a 250 would be better.
as jason said..get a used one.
with the release of the 300 the market is likely to be flooded with race prepped 250's.
OMRRA just revised the rules for ultralight superbike to keep the 300 out, and the 300 will not be legal for 250 cup with OMRRA or WMRRA. So, if you do see an 08-12 ninja 250 race bike for cheap let me know, lol.

I don't think outgrowing it is an issue on the track - for me it's all about riding whatever I'm on as fast as I can possibly ride it. It doesn't matter if a faster bike goes past me.
If that bothers you, then either a faster bike or rather than a track day, actually racing in a class where the bike is competitive are two options. Finding a class where the 300 will be competitive might be difficult.
Trouble with racing is that you're in it to win it so you can't just enjoy riding your bike as fast as you can. You also need the fastest bike. That can get expensive.

Let me know, too! There's a HUGE Ninja 250 race group out here in California at Chuckwalla. I would LOVE to get in on the 250 shenanigans.
My buddy, Bryan, has a race 250. He out-corners everyone during track days. Since it's only got a single-disk front brake, he says he barely uses it and he just uses shifting to control his speed. He's pretty much WOT the whole track. He started on a 636 3 years ago and got the 250 about a year ago. It's done leaps and bounds for his skillz. I've ridden it at Pahrump and it really teaches you to corner well and not over-brake for turns. The session I ran on my 600 right after riding the 250 was the best session I think I've ever had at Pahrump.
The 250/300's are FUN bikes that really teach you some skills!

One of the TPM coaches rides a 250 she is a beast on it. On thunder bolt you can pass her on the long straight but she'll get you on the corners and on the lighting course forget it.

Although, if it were my life, I'd track-only the 300 and let your dad buy a cheap street bike. That way you don't have to keep switching it back and forth. Not that it's a big deal to tape lights, but it'd save you on tires.

It depends on the track, too. At PIR Dani Pedrosa couldn't turn a faster lap than anyone that's decently fast on a 600.
Some of the guys on 125 GP bikes can be real terrors. Catch them on the straights and then prepare to be bombed in the next corner, lol.
