When I just did track, I safety wired the oil drain plug and filter. I safety wired a clip on the oil fill and rear axle.

For racing:
front axle
pinch bolts
front / rear caliper bolts
silicon on the oil galley plugs
radiator cap
coolant drain

I also drilled a hole in the bolt on my exhaust from the exhaust hanger and put safety wire in it. It's not deigned to keep the nut completely tight, just designed to ensure it would not completely come off the exhaust hanger.

As little as possible. If you torque them they don't come loose. I do the oil, filler, plug & filter.

On my bike, and I only did track days, I safety wired:

Master banjos
Caliper banjos
Caliper mounts
Pinch bolts
Rear axle hair pin
Oil plug
Oil filter
Oil filler cap
Grips
Dzus fasteners
Exhaust springs (not on the head, but the rest of them)
Coolant drain plugs
Radiator cap

The holes cost nothing to drill (if you don't break the bit), and safety wire is cheap insurance.
