Hi. I have taken my forks off to replace the headstock. Problem is I didn't measure how far they should go up the lower triple? Can anyone measure theirs or tell me how far up it should go for factory settings? Thanks

You can insert the forks flush with the top of the upper triple clamp. This makes the front end a bit higher, which is good for tall people and makes the front end easier to lift for wheelies.
If you are shorter or don’t want the front end to lift as easy, slide the forks more upwards, lowering the triple clam downwards.
Regardless of your placement, make sure your triple clamps are fully on the forks where the diameter is correct for them. When you look at them, you should see what I mean. Also make sure you torque them to spec so nothing happens. I recommend a torque wrench if you do not already have one. They come in handy and will be used more than once. There are lots of bolts on a bike that you do not want to under or over torque, such as the front sprocket speed sensor. Fairing bolts can also rattle out if too loose, and strip if too tight.

That's not actually correct. You need to know the specification for your particular make and model bike and start with that. You can make small changes up or down for better turn in (less stable) or for more stability (slower turn in).
Changing the height of the forks in the triple changes the geometry of the bike and can adversely affect it's handling (less stability or harder turning), and can lead to a crash if the bike is very unstable or won't turn properly.
