Is it doing something it hasn't been. The '95-'97 run very cold. I usually keep half my radiator blocked even in the summer and I live in South Texas where the temperature regularly get over 100 F.

Damn your bikes run cold! My '03 runs at around 150-200 depending on the weather. On hot days the frame and tank get really hot!

I have a feeling your coolant is low. If the coolant isn't touching the sensor the sensor will show a low temp reading, but obviously the bike was hot cause you burnt yourself. Or your sensor is malfunctioning...get it looked at..
