Stock info is on Kawasaki's website. Go under 'Owner Info' and follow the links to the spec page. It should list the jet sizes in the 49 state and Cali carb setup.
For the Hindle, I'd call or e-mail Hindle. Ask them if they know the best set-up. Otherwise, think about finding someone with a dynomometer with and exhause gas analyzer. You can do it yourself, but it's more trial and error, plus taking the time to inspect the spark plugs and fiddle with the float height, pilot and main jets. If you do go that route, document everything you do so you can return to a previous setting if you have to. It's easier if you tweak one thing at a time, also.
