Dynojet kits come with enough of a wide range of needles you can tune by trial and error if you're mechanically inclined. Sound comes from the end can design, so the full system vs. endcan only debate isn't important, it's the Muzzy endcan vs. Yosh endcan... and it just so happens I ride with 1 guy with a Muzzy, 1 guy with a Yosh endcan on zx6r's... the Yosh is less noisy than the Muzzy, although it sounds good don't get me wrong, it's very clean sounding, maybe a bit deeper and gruntier and less noisy at high revs. Muzzy sounds less restricted to me. It's nice having your bike dyno'd for 2 reasons: it shows you small "dips" in the powerband that you can wrinkle out and helps set your jetting, and secondly... well, don't ya wanna know how much HP you added with these trick new parts???
I'm guessing you'll add between 6-9 hp with the endcan and jet kit, and maybe about another 2 if you go full exhaust system. Seems typical with all the tests I've looked over...
