So I took off my toes to change them and while I was gone my friend pressed down on the breaks

and now the calipers don't have enough room to put back on... It's just closed now, is there any way to reset/untighten/ loosen it so I can put it back on?

You need to unscrew the bleed nipple and then lever the two pistons back carefully with a flat screwdriver and once you got them back so far you should be able to use a pair of grips to lever them back fully.
Don't forget to clamp of the brake hose if attached otherwise you'll have brake fluid keep dripping out. You'll have some fluid come out when you unscrew the bleed nipple but that's normal.
Once you get them back on then you need to bleed the system and top up the reservoir. Should you need help on how to bleed the system then YouTube is a good place to look, just search bleeding brakes on a motorcycle.
