aight, got my question answered on the ZX6R Yahoo Group.
Here's the answer:
They are not riveted but are a one time bolt which the head snaps off when tightened up. You can undo these with a centre punch by hitting the head of the (rivet) and then just turn it out , (you will need to replace with new bolts for security reasons) suggest you soak it with WD oil first to help turn it out when loose
