Fully seated position is when the adjuster is turned to the fully CLOCKWISE position. The 07/08 ZX6R does not use a ball and detent spring so there are no actual clicks, this is actually a good thing as it allows for more fine adjustments.
But for your purposes, a click is equal to 1/4 turn. SO:
If you were to set the fron fork rebound (top of the fork) to six clicks out from the fully seated position, you would turn the adjuster clockwise until it stops (don't force it) then turn it counter clockwise 1 1/2 turns, that would be equal to six clicks out, 1 1/4 turns would be equal to five clicks out etc. etc.
On the shock, the rebound and compression settings are apposed to the fork, meaning that the rebound is on the bottom and compression is on the top.
