My 600cc cruiser came with 2 carbs from 1988 to 1998, then 1 carb from 1999 to 2007.

2 carbs equals more power, less gas mileage, more carb maintenance.

it really depends on the size of the carbs. I think the reason for multiple carbs is to increase the velocity(speed) of the air flow while still having enough volume(amount). if you don't have enough velocity the fuel cant mix well enough to burn efficiently. So with two smaller carbs you can flow the same amount of air but the air has a higher speed in the intake than a larger single carb.
