On my back tire, I hear something. Like a leaf is stuck to it. It drive me insane. So when I look at the whole tire I see a little cut in the middle where I can see some string. I guess that means it's time to replace the tire? What the hell is that sound?

The "fliph-fliph-fliph" sound (how do you like THAT impression) is probably that string against your swing arm, muffler, frame, etc. At high speed, it would make quite a racket. If your seams are coming apart, I would consider some tires. Or at least inspect your tread depth and seal around the rims.
